In this video, we’re going to talk about a common question I get: can I eat beets, carrots, peas, and tomatoes on keto?

This is a great question that can be confusing for many people starting keto. Let me break it down.

Foods (even vegetables) with high amounts of carbohydrates—especially sugars—can kick you out of ketosis. If the fiber is higher, it may help buffer the carbs and sugars somewhat.

Take a look at the nutrients in each of these vegetables.

  1. Hi Dr Berg these are very informative, thank you for taking time to do this for us. I’ve been following the vegetarian (no egg) keto diet for over a month. My recent blood work suggested positive changes and I’ve lost a few kilos already. I want to continue on the IF+keto diet but I’ve a question, if the low sugar and high carb foods like corn (in India we make chapati from corn flour) are consumed with like 10 cups of leafy fibrous vegetables like spinach, does that break the keto mode?

  4. Jerusalem artichoke is also known in Italy as Topinambur. It tastes like artichoke but it really seams like little potato. Artichoke in Italy is very common and is keto food (Sodio 94 mg Potassio 370 mg Carboidrati 11 g Fibra alimentare 5 g Zucchero 1 g Proteine 3,3 g)

  5. I grew my own corn this year. It was delicious, but I hadn’t eaten corn in years. I could only eat a small amount it FILLED me up like crazy!

  6. Apart from the mistake about artichokes, it should be specified that heating some vegetables increases their sugar content. Boiling a potato with its skin will result in a moderate 55 IG (still not keto friendly), whereas baking it will lead to 75-80. The same goes with carrots. Crude, they’re ok, but if you heat them their IG will go skyhigh. I wouldn’t recommend carrots except in salad on a keto diet.

  10. I’ve been eating lots of artichoke for months and it never hindered my keto fat loss, it’s actually one of the best vegetables for keto diet

    • Same I can’t find anything that matches up with what he said about artichokes. I love his videos but I’m starting to realize he doesn’t site his sources for a lot of them.

    • 1 cup of water weighs only weighs 236 grams, so how can one cup of artichokes have 269 grams of carbs? Artichokes are not heavier than water. I think someone on his research staff misplaced a decimal point.

  14. I love Dr Berg and all his free and scientific information. I appreciate it so much! I have lost 17 kilograms in 6 months and feel amazing! I have also reversed early menopause through Keto and no no brain fog at all.

  15. I’m going to jump on the artichoke comment. It is an awesome food with immeasurable benefits and has been my go to low carb food for years. Depending on the brand, you can get marinated artichoke hearts in a healthy oil with amazing flavor that accents almost any food. I have found products with as little as 2 grams of carbs offset by 2 grams of fiber with no sugar and lot’s of good fat. In general, a whole artichoke has about 14 grams of carbohydrate. I can’t imagine where the 269 gram number came from, and yes they are an excellent source of potassium. The best part is that most people steam them and dip them into an organic extra virgin olive oil dip or grass fed butter and so lot’s of keto friendly benefits.

  19. I am eating a beet every day and I am still loosing weight at an impressive rate. They make smoothies more palatable and the potassium is a God sent. I would not go as far as to say that everyone on keto should be eating them but for those of us who work out I think they are great.
