Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 15-20 minutes.
Add the shredded chicken and simmer for an additional 5 minutes.
Adjust seasonings to taste and serve hot.

Tomato and White Bean Soup:

Ingredients:
1 can diced tomatoes (low-sodium)
1 can white beans (such as cannellini or navy beans), drained and rinsed
4 cups vegetable broth
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried herbs (such as basil or oregano)
Salt and pepper to taste
Instructions:

In a large pot, sauté the onion and garlic until softened.
Add the diced tomatoes, white beans, vegetable broth, dried herbs, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about 15-20 minutes to allow flavors to meld together.
