QUINOA VEGGIE BOWL
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons lemon juice
Instructions:
- Rinse the quinoa and place it in a pot with the water.
- Bring the water to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the quinoa is cooked, and the water is absorbed.
- In a large bowl, combine the cooked quinoa, red and yellow bell peppers, zucchini, cherry tomatoes, and chickpeas.
- Drizzle with olive oil, salt, and pepper, and toss to combine.
- Stir in the lemon juice.
