QUINOA VEGGIE BOWL

QUINOA VEGGIE BOWL

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 can of chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons lemon juice

Instructions:

  1. Rinse the quinoa and place it in a pot with the water.
  2. Bring the water to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the quinoa is cooked, and the water is absorbed.
  3. In a large bowl, combine the cooked quinoa, red and yellow bell peppers, zucchini, cherry tomatoes, and chickpeas.
  4. Drizzle with olive oil, salt, and pepper, and toss to combine.
  5. Stir in the lemon juice.
