Quinoa Veggie Bowl Recipe
Healthy quinoa veggie bowl with bell peppers, zucchini, cherry tomatoes, chickpeas, olive oil, and lemon juice. Perfect vegetarian diet meal.

Ingredients List
- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 can chickpeas, drained rinsed
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp lemon juice
Cooking Instructions
- Rinse quinoa, cook with water 18-20 minutes until absorbed
- Combine cooked quinoa with peppers, zucchini, tomatoes, chickpeas
- Drizzle olive oil, salt, pepper, toss to combine
- Stir in lemon juice
