Healthy quinoa veggie bowl with bell peppers, zucchini, cherry tomatoes, chickpeas, olive oil, and lemon juice. Perfect vegetarian diet meal.

 

QUINOA VEGGIE BOWL

 

Ingredients List

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 can chickpeas, drained rinsed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp lemon juice

Cooking Instructions

  1. Rinse quinoa, cook with water 18-20 minutes until absorbed
  2. Combine cooked quinoa with peppers, zucchini, tomatoes, chickpeas
  3. Drizzle olive oil, salt, pepper, toss to combine
  4. Stir in lemon juice
