GRILLED CHICKEN SALAD

Ingredients:

  • 4 boneless and skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups mixed greens
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinaigrette

Instructions:

  1. Season the chicken breasts with salt and pepper.
  2. Heat a grill pan over medium-high heat and brush with olive oil.
  3. Grill the chicken for 4-5 minutes per side, or until cooked through.
  4. In a large bowl, combine the mixed greens, avocado, cherry tomatoes, and feta cheese.
  5. Slice the chicken and add it to the bowl.
  6. Drizzle with balsamic vinaigrette and toss to combine.
