1. Cauliflower Fried Rice:

  • 1 head of cauliflower, grated
  • 2 tbsp (30 g) coconut oil or other keto-friendly oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 large eggs, beaten
  • 1 cup (150 g) diced carrots
  • 1 cup (150 g) frozen peas
  • 4 green onions, thinly sliced
  • 2 tbsp (30 ml) soy sauce or coconut aminos
  • Salt and pepper, to taste


    1. In a large skillet, heat the oil over medium heat until hot.
    2. Add the onion and garlic and cook until softened, about 2-3 minutes.
    3. Push the onion mixture to one side of the pan and pour the beaten eggs into the other side. Cook, stirring occasionally, until scrambled and set, about 2-3 minutes.
    4. Add the grated cauliflower, carrots, peas, and green onions to the pan and cook until the vegetables are tender, about 5-7 minutes.
    5. Stir in the soy sauce or coconut aminos and season with salt and pepper.
  • Serve hot.
