Cauliflower Fried Rice Recipe

CAULIFLOWER FRIED RICE

 

Required Ingredients

  • 1 head cauliflower, grated
  • 2 tbsp coconut oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 4 green onions, sliced
  • 2 tbsp soy sauce or coconut aminos
  • Salt and pepper to taste

Step-by-Step Instructions

  1. Heat oil in large skillet over medium heat
  2. Cook onion and garlic 2-3 minutes until soft
  3. Push onions aside, scramble eggs on other side
  4. Add cauliflower, carrots, peas, green onions
  5. Cook 5-7 minutes until tender
  6. Stir in soy sauce, season, serve hot

Best Serving Options

  • With grilled chicken or shrimp
  • Top with sesame seeds
  • Add sriracha for spice
