BAKED SWEET POTATO AND BLACK BEAN BURRITO BOWL

BAKED SWEET POTATO AND BLACK BEAN BURRITO BOWL

 

  1. Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 can of black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, diced
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cups cooked brown rice

Instructions:

  1. Preheat your oven to 400°F.
  2. In a large bowl, toss the diced sweet potatoes with the olive oil, salt, and pepper.
  3. Spread the sweet potatoes out in a single layer on a baking sheet.
  4. Bake for 25-30 minutes, or until tender and lightly browned.
  5. In a large bowl, combine the black beans, corn, avocado, lime juice, cilantro, and baked sweet potatoes.
  6. Serve over cooked brown rice.
