Ingredients:
- 3-4 ripe bananas, peeled and sliced
- 1 tsp vanilla extract
- ½ cup Califia Farms 2.5x Concentrated Cold Brew Coffee (or your preferred strong cold brew)
- ¼ cup cocoa powder
- Chocolate chunks (for topping/mix-in, optional)
- Prepare Bananas: Peel and slice your ripe bananas into small chunks.
- Freeze Bananas: Place the banana chunks into a freezer-safe bag or container and freeze for at least 4 hours, or until solid.
- Blend: Transfer the frozen banana chunks to a food processor. Add the vanilla extract, cold brew coffee, and cocoa powder.
- Process: Blend until the mixture is completely smooth and creamy, scraping down the sides as needed. It may take a few minutes and go through stages (crumbly, then paste-like, then smooth). Keep processing until it reaches a soft-serve consistency.
- Transfer & Freeze (Optional): Spoon the "nice cream" into a loaf pan or an airtight container. If desired, sprinkle with chocolate chunks. For a firmer ice cream consistency, freeze for another 1-2 hours.
- Serve: Scoop and enjoy immediately, or store in the freezer for later. If stored longer, you might need to let it thaw for a few minutes before scooping.
