BAKED SWEET POTATO AND BLACK BEAN BURRITO BOWL

Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 can of black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, diced
- 2 tablespoons lime juice
- 1/4 cup chopped fresh cilantro
- 2 cups cooked brown rice
Instructions:
- Preheat your oven to 400°F.
- In a large bowl, toss the diced sweet potatoes with the olive oil, salt, and pepper.
- Spread the sweet potatoes out in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until tender and lightly browned.
- In a large bowl, combine the black beans, corn, avocado, lime juice, cilantro, and baked sweet potatoes.
- Serve over cooked brown rice.
