Cauliflower Fried Rice:
Ingredients:
- 1 head of cauliflower, grated
- 2 tbsp (30 g) coconut oil or other keto-friendly oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 large eggs, beaten
- 1 cup (150 g) diced carrots
- 1 cup (150 g) frozen peas
- 4 green onions, thinly sliced
- 2 tbsp (30 ml) soy sauce or coconut aminos
- Salt and pepper, to taste
Instructions:

- In a large skillet, heat the oil over medium heat until hot.
- Add the onion and garlic and cook until softened, about 2-3 minutes.
- Push the onion mixture to one side of the pan and pour the beaten eggs into the other side. Cook, stirring occasionally, until scrambled and set, about 2-3 minutes.
- Add the grated cauliflower, carrots, peas, and green onions to the pan and cook until the vegetables are tender, about 5-7 minutes.
- Stir in the soy sauce or coconut aminos and season with salt and pepper.
- Serve hot.
